Where do I even begin?

Blueline Q was founded on three simple principles: faith in our Lord and Savior Jesus Christ, family, and a commitment to serving true Texas craft barbecue. Those values have guided every decision we have made from the very beginning and continue to shape who we are today.

My name is Matthew Davis, owner and head pitmaster of Blueline Q. After retiring from a career in law enforcement, I decided to take a leap of faith and pursue a dream. What started with nothing more than a Blackstone grill, a pop-up tent, and a few hundred dollars has grown into multiple food trucks and restaurant locations serving customers throughout North Central Florida.

The journey has never been easy. There have been challenges, setbacks, and plenty of people who said it couldn't be done. But every time someone told me I couldn't, I chose to prove that I could. Through hard work, perseverance, and God's blessings, we continued to grow, always keeping our focus on creating a better future for our children and leaving behind something meaningful for the next generation.

We don't cut corners, we don't compromise quality, and we never sacrifice the product our customers have come to know and trust. From carefully selected meats to the time and dedication required to cook them low and slow, we are committed to delivering authentic Texas craft barbecue right here in North Central Florida.
